Executive Chef Tyson Gee and Executive Pastry Chef Callum Liddicoat present a Vivid-inspired 3-course menu that pays homage to the festival’s 2025 theme: Dreams. Designed to evoke wonder and delight, each dish celebrates seasonal, sustainable ingredients and the transformative power of creativity. The menu can be enjoyed at both The Living Room and The Dining Room with views of beautiful Sydney Harbour.

A vision in delicate pink hues, this dessert mirrors the ethereal beauty of dreams. The floral notes of rose and the creaminess of ricotta intertwine with the tartness of rhubarb and crisp pink lady apples, creating a dish that is both elegant and imaginative.
